Hard boiled eggs are such a finicky thing to make, maybe you leave them in too long, the water isn’t just right temperature or they won’t peel without a great deal of hassle. The rave reviews of Instant Pot hard boiled eggs led me to make my purchase during Amazon’s Prime Day sale this summer and we have found many more uses ever since.
After trying several different recipes out there and making a few small tweaks, I finally have landed on the easiest and most consistent hard boiled egg recipe. No tricky timing, complicated steps and no ice baths just some easy steps that produce perfect (or as close to!) hard boiled eggs.
Place the rack on the bottom of the Instant Pot
Pour in just enough water to fill the bottom of the pot but not touch the rack (about 1/2 cup)
Place the eggs, not touching one another, on the rack. Lay the eggs sideways if you are using the rack that comes with the pot or if you are using this stackable rack that can hold even more, stand them up.
Securely lock the lid and be sure that the vent in closed
Set pressure cook to 5 minutes
Once the 5 minute pressure cook time has elapsed, wait 5 minutes
Quick release (be careful not the have your hand near the vent)
Use tongs to lift the eggs out of the pot and into a strainer
Run under cold water until cool enough to handle
Tap the top of the egg on a counter or hard surface and then roll until cracked
Peel off the remainder of the shells
Enjoy your perfect hard boiled eggs!
